HYSSOP

AKA: Ezob, Hyssopos,  Hyssopus officinalis

The herb Hyssop refers to the flower tops of a small semi woody plant that is native throughout the Eastern Mediterranean and Central Asia, which now widely cultivated as a popular herbal medicine and culinary additive. It has been around since ancient time and it is even mentioned in parts of the New Testament.

Having a strong, aromatic flavor, Hyssop is also used in many dishes. It can be used in stews and salads,  added to cranberries, stewed peaches and apricots, but most cooks will tend to use it sparingly due to its overly intense flavor. It is also used to color the liquor absinthe. Due to its ability to attract bees and butterflies, farmers like to plant it alongside other plants and it is said to help increase the yield of grape crops.
