4 DAY SAUERKRAUT DIET

You can lose up to 6 pounds in 4 days following this sauerkraut diet .

1st day
Breakfast: 175 g of non-fat cottage cheese and 1 slice of whole graine bread.
Lunch: stew together 200 g of sauerkraut, 100 g of pork and 1 pear.
Dinner: salad made of 150 g of sauerkraut, 4 raddishes, 1/2 white raddish and 1/2 cucumber. Sauce: 75 ml of yogurt mixed with 1 tea spoon of ground nuts.

2nd day
Breakfast: salad made of 1 banana and 150 ml of non fat yogurt, sprinkled with 1 table spoon of ground oatmeal.
Lunch: soup made of 200 g of sauerkraut, 100 ml of broth and 50 ml of apple juice. Add 2 sweet red peppers (cut them into small pieces) 5 minutes before the soup is done.
Dinner: salad made of 200 g of sauerkraut and 150 g of fried salmon filet, sprinkled with lemon juice.

3rd day
Breakfast: salad made of 1 orange and 150 g of cottage cheese, sprinkled with sunflower seeds.
Lunch: 150 g of fried fish and 150 g of sauerkraut.
Dinner: potato pancakes made of 3 potatoes and salad mmade of 100 g of sauerkraut and 4 grapes.

4th day
Breakfast: 1 whole grane bagel, 1 oz of cheese 'Gouda' and a few apple slices.
Lunch: 200 g of fried beef filet and 150 g of sauerkraut stewed with 1 pineapple.
Dinner: salad made of 3 tomatoes, 100 g of sauerkraut and 125 g of bacon.

Fermented Foods

Fermentation is a chemical change brought about by yeast, bacteria or mold. This process has been used for centuries by people in order to make and preserve certain types of food.  Wine, cheese, beer, yogurt, sauerkraut, pickles and ketchup are all examples of food that are made through the process of fermentation.

Health benefits of fermentation

Over 200 species of bacteria live in our gut. These microbes help break down food in our intestines, aid in the digestion process, help fight off disease, and boost our immune system. A good balance of intestinal flora is very important to our overall health. If we eat nothing but overly processed and hard to digest foods, then the fermentation process that occurs within will kick into overdrive resulting gas, bloating, diarrhea, constipation and might possibly lead to other diseases like cancer.  Providing our bodies with predigested foods such as fermented good will help the existing microbes within to  do the job they need to do.

Fermentation is not only a way to preserve certain foods, it some cases it actually adds to the nutrient value of it.  Fermented vegetables contain more vitamin C (sailors would eat sauerkraut to prevent scurvy) and fermented milk products have ample amounts of B vitamins. The bioavailability of these vitamins also increases with fermentation. Probiotics, or “good bacteria” are also formed through the process of fermentation. This can be seen in the ever increasing popularity of lactobacilli that are found in name brand yogurts such as Activia and DanAlive.

How to make sauerkraut

Sauerkraut is an extremely common fermented food that comes in many varieties and is very easy to make. It is an immune boosting, flu-fighting, cancer battling, and digestive aid that you can make in your kitchen without too much trouble. It tastes great on burgers, in soups, and is even great by itself.  You can make it by using salt or whey.

Here is how to make traditional “wild” fermented sauerkraut  with salt.

Here is what you need:

  • Ceramic bowl
  • Wooden spoon
  • A wide mouth 2 quart  jar (or a 1 quart mason jar for half the recipe)
  • A pint size mason jar, or another glass object that can fit into the first jar and weigh down the vegetables.

Ingredients:

  • One head of cabbage: shredded
  • 2 apples: peeled and sliced
  • 2 carrots: grated
  • Sea salt

Instructions:

As you shred the cabbage, add handfuls to the ceramic bowl and sprinkle salt over each layer to help draw out the moisture. Add the apples and carrots along with the cabbage into the jar and pack them down with the wooden spoon as you go. Make sure to release as much juices as possible. Now weigh down the veggies with your other jar, pressing down and pushing out as much air as possible and get the juices flowing. Now, put a cheesecloth or towel over it and let it sit until it is tart and crunchy. This makes take a few days to a few weeks depending on the weather. Just be sure to test it often. Once tart, stick it in the fridge and enjoy at your convenience.

While many people think sauerkraut is something you out on a hotdog, for the past couple of years scientists have been letting people know that this food which is made out of fermented cabbage is actually a superfood capable of boosting your immune system, aiding the digestive process and even fighting cancer. Let us look at a few of the benefits of Sauerkraut.

Sauerkraut and the immune system

It is no secret that sauerkraut has a beneficial effect on the immune system. Not only is it packed with vitamins and minerals that are also found in raw cabbage,  sauerkraut also happen to contain  beneficial phytochemicals which are created by the fermentation process.  Eating sauerkraut on a regular basis can help fight off things like the common cold as well as help us deal with issues such as bad skin, weight gain and toxic blood which are all side effects of an unhealthy immune system.

It a study published in the Journal of Agricultural and Food Chemistry, it was found that the process of cabbage fermentation broke down the compound glocusinolate found in the plant into cancer fighting isothiocyanates. Another Study from the University of New Mexico found that fermented cabbage is actually better at fighting cancer than if it is raw or cooked.  In yet another study, researchers found that Polish American women had much higher breast  cancer rates than Polish Women. When they try to determine why, they found it was because Polish American women were eating much less of the cancer fighting super food than they were in the motherland.

Digestion

Like yogurt, Sauerkraut is laden with beneficial bacteria that can help maintain balance within the gastrointestinal tract.  Fermented cabbage contains the bacterium: Lactobacilli plantarum which can help boost your immune system by increasing the amount of antibodies that can help fight off E-coli, salmonella, and candida. L.planatarum  also contains the antioxidants glutathione and superoxide dismustase which can help fight off free radicals. These beneficial bacterium  also helps turn hard to digest lactose into easily to digest lactic acid. It also neutralizes phytic acid found in grains and trypsin-inhibitors found in soy. It also helps generate omega-3 fatty acid and GTF chromium a trace mineral that help with digestion.  Suffice it to say, that sauerkraut has been used for millennia to help cure upset stomachs by increasing healthy flora in the intestinal tract.

With the Avian Flu and the Swine flu causing worldwide panic, it is more important than ever to take preventative steps to help keep our immune system in tip top shape. Thankfully we have sauerkraut on our side.  During  the latest Avian Flu outbreak, a scientist from Seoul reportedly fed Kim Chi extract (a form of fermented cabbage) to 13 chickens that were infected with the deadly disease. 11 of the 13 made a full recovery. Scientists believe that it is because the fermentation process actually added nutrient value to the food.  Fermented cabbage has shown to have more vitamin C and the ability to facilitate the breakdown and assimilation of proteins.
